Hoppin’ John
This classic southern dish is said to bring good luck for the New Year! Enjoy with a crisp glass of our Müller-Thurgau or our Estate Rosé!

Ingredients

  • 1/2 pound sliced bacon, cut into pieces
  • 1 green or red bell pepper, diced
  • 2 celery ribs, diced
  • 6 green onions, sliced (separate green and white part)
  • 1 cup uncooked long-grain rice
  • 2 cups Chicken or Bone broth
  • 1/4 teaspoon salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried oregano
  • 1 bay leaf
  • 1 can (15 ounces) black-eyed peas, rinsed and drained

Directions

  1. In a large skillet, cook bacon over medium heat until crisp.
  2.  Remove crisp bacon and keep some fat and drippings.
  3.  Sauté pepper, celery and onions in drippings until almost tender.
  4. Add rice and toast lightly for about 2 min, add water and seasonings. Cover and simmer for 10 minutes.
  5.  Add peas and bacon; simmer 10 minutes longer. Discard bay leaf.
  6. Remove lid and let it sit for 5 minutes. Then enjoy!
