
Hoppin’ John
This classic southern dish is said to bring good luck for the New Year! Enjoy with a crisp glass of our Müller-Thurgau or our Estate Rosé!
Ingredients
- 1/2 pound sliced bacon, cut into pieces
- 1 green or red bell pepper, diced
- 2 celery ribs, diced
- 6 green onions, sliced (separate green and white part)
- 1 cup uncooked long-grain rice
- 2 cups Chicken or Bone broth
- 1/4 teaspoon salt
- 1 teaspoon smoked paprika
- 1 teaspoon cayenne pepper
- 1/2 teaspoon dried basil
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried oregano
- 1 bay leaf
- 1 can (15 ounces) black-eyed peas, rinsed and drained
Directions
- In a large skillet, cook bacon over medium heat until crisp.
- Remove crisp bacon and keep some fat and drippings.
- Sauté pepper, celery and onions in drippings until almost tender.
- Add rice and toast lightly for about 2 min, add water and seasonings. Cover and simmer for 10 minutes.
- Add peas and bacon; simmer 10 minutes longer. Discard bay leaf.
- Remove lid and let it sit for 5 minutes. Then enjoy!
