Tomato Burrata Salad
Serves: 4-6 people
Time: 30 minutes marinating, 15 minutes to put together

INGREDIENTS
1 pint cherry tomatoes, halved
1 (8oz) heirloom tomato, sliced
4x 2oz balls burrata
3 garlic cloves
1 lemon, or 1.5oz lemon juice
3oz olive oil
2-4oz slivered almonds
2 Tsp chives
4oz basil, or 30 basil leaves
1-2oz drizzle balsamic vinegar or balsamic reduction
Salt, to taste
Pepper, to taste

RECIPE
Prepare the Marinade:

In a bowl, combine garlic, lemon juice, and olive oil.

Marinate the Cherry Tomatoes:
Add the halved cherry tomatoes to the bowl with the olive oil mixture. Let the tomatoes marinate at room temperature on the counter for 30 minutes. After 30 minutes, strain the mixture, leaving just the marinated cherry tomatoes.

Plate the Dish:
Line the bottom of your plate with sliced heirloom tomatoes.
Scatter the marinated cherry tomatoes on top of the heirlooms.

Add the Burrata:
Lightly salt the burrata and cut it in half. Arrange the burrata on top of the tomatoes as you like—either as one large portion, smaller pieces, or a mix.

Garnish:
Sprinkle the dish with slivered almonds, chives, basil, and salt and pepper to taste. Drizzle balsamic vinegar or balsamic reduction over the dish as the final touch.
