Time flies when you are having fun. We cant believe it has already been a year since we launched Evolution Sparkling.
This is our first sparkling wine after more than 40 years of winemaking, and with it, were turning every day and every occasion into a celebration.
Quality is integral to all that we do, so when it came time to make Evolution Sparkling, we chose the traditional methode champenoise using Evolution White as the base. What resulted evolved our Evolution line, bringing bubbles and celebration to our lives.
Why did we decide to make Evolution Sparkling? First, we all love bubbles! So, why not make what we love to drink and share it with the world?
Second, we always like trying new and different things. With the popularity of home carbonation machines, we tried Evolution White in one of the machines just for fun and after a few explosions that sprayed the delicious wine all over our counters and cabinets, we figured out how to safely do it, and the result was delicious! In fact, it was really good! So that got us thinking, what if we didnt just add CO2 but instead stayed true to our roots and made wine in the highest quality traditional methods of Champagne? The rest is history with Evolution Sparkling hitting the shelves in May 2013.

Youll get aromas and flavors of apricot, green apple and pear, with hints of white peach and citrus; the mouth feel is slightly creamy from the secondary fermentation in the bottle, with a light flintiness and off-dry finish.
As with all of our Evolution wines, Evolution Sparkling pairs deliciously with food from grilled cheese to truffle-salted popcorn to potato chips to cedar plank wild salmon. Its good with everything and perfect for celebrating whatever.
