The Velveeta of Wine

Check out this article on micro-oxygenation and new wine technology. I have such a reaction against this. It 's the processed cheese of the wine industry. The makers of Velveeta thought they were improving cheese and making it more reliable. In a time when there is a movement towards Farmers' Markets--natural, organic, sustainable, fresh and get to know where your food comes from--this seems to be the reverse trend. It is driven by bottom line thinking. I could go on, but I think I'll stop here.
