Winemaker's Notes: Yeast at Sokol Blosser

I use a few different commercial yeast strains, which are merely pure, cultured isolates of naturally occurring yeast. I use certain ones for specific wines because of their different fermentation kinetics and organoleptic qualities.

Nothing we use has been genetically modified. Contrary to what some people are saying, wines don't have to be certified "organic" to ensure that they haven't been made with GMO yeast. The "second" level of certification -- "made with organic grapes", which is what we have -- is also an assurance that no GMO substances have been used. In fact, Oregon Tilth, our certifier, required me to get a certificate from the manufacturer attesting that no "excluded methods" (cell fusion, microencapsulation, macroencapsulation, or recombinant DNA technology, which is genetic modification), ionizing radiation, or use of sewage sludge as a growth medium were used in the production of any of the yeast or bacteria we use.

Because our customers are becoming aware and concerned about GMO's, we are considering putting not only a "made with organic grapes" statement on our label but also a "no GMO" statement as well.
